Nadia Sharifi and Chef Wes were back today with another healthy recipe as well as some advice for staying on track to lose weight through the Easter holiday! Below is the recipe for Chef Wes’ Coffee Turmeric Rubbed Pork Tenderloin with Marsala Wine Sauce:
6oz trimmed pork tenderloin medallions
1/2 cup favorite ground coffee
1 tablespoon turmeric
1 Teaspoon Stevia or Brown Sugar
4 oz Shiitake mushrooms julienned (poached)
1/4 cup Marsala wine
2 Tablespoons Avocado oil
2 Tablespoons balsamic
2 Tablespoons honey
Heat avocado oil, tenderize pork with Palm of hand. Mix coffee, brown sugar and turmeric. Dredge the pork in the mixture. Then add pork to hot oil sauté 2 minutes on each side, add poached shiitakes and Marsala wine, until the wine is reduced by half. Mix the balsamic and honey together.
Plate and drizzle the pork with the balsamic honey glaze.
