Chicken Scampi with Zucchini Noodles

Tastefully Fit Trimline’s Nadia Sharifi and Chef Wes joined us with another delicious and nutritious meal: Chicken (or shrimp) Scampi with Zucchini Noodles. The recipe is as follows:

Olive Oil Spray

6 oz or 8 oz Skinless, Boneless Chicken Breast halves

2   Medium Zucchini, cut into spirals using a spiral slicer (or purchase spiraled)

1/2 Large Red Pepper, sliced thin

1/3 Cup Mushrooms, sliced thin

2 Tablespoons crushed garlic

2 Tablespoons fresh Basil

1/3 Cup Chicken Stock (sodium-free, fat-free)

Sea Salt & Pepper

1 oz Parmesan Cheese (optional)

Coat a nonstick skillet with cooking spray and place over medium-high heat. Cook chicken in the hot skillet until browned and no longer pink in the center, 4 to 5 minutes per side. Add vegetables, garlic, basil and stock. Simmer for 2 to 3 minutes. While simmering place zucchini in another nonstick skillet over medium-high heat; cook and stir until tender yet firm to the bite, 3 to 4 minutes.

Transfer zucchini to a serving plate and add chicken scampi on top. Sprinkle with Parmesan cheese (optional).

Makes ONE Serving = 1 Protein, 2 Veggies, 1/2 Dairy (if you add Parmesan Cheese)
