Cooking with Daybreak: Mike Parker shares holiday recipe

Members of the abc27 news team are sharing their favorite holiday recipes over the next month on Daybreak.

On Thursday, Mike Parker was in the kitchen making blueberry pie.

Captain Willie’s Blueberry Pie



4 cups fresh blueberries
1/2 — 3/4 cup sugar (depending on sweetness of berries)
3 Tablespoons flour
1/2 teaspoon cinnamon
1 teaspoon lemon juice
4 pads of butter
Pre-made pie crust


In a pie plate, place the bottom layer of crust.
Add berries.
Mix together dry ingredients (sugar, flour and cinnamon), and sprinkle over berries.
Drizzle with lemon juice, and place pads of butter evenly over top.
Add the top layer of crust, and seal edges.
Cut four slits in top of crust.
Bake at 400-degrees for first 15 minutes, then reduce to 350 for 30 minutes, or until crust is golden brown.
Allow to cool for 2-3 hours.
