Middle Eastern Lamb Sliders

Chef Jackie Pestka of Keystone Technical Institute shared this recipe for Middle Eastern Lamb Sliders with Tzatiki Sauce.


2 Tbls. Golden olive oil
8 ozs. Ground lamb
1 egg, beaten
1 Tbls. Minced garlic
1 Tbls. Minced garlic
1/2 tsp toasted whole cumin
1/2 tsp. ground coriander
1 Tbls. Chopped cilantro
1 Tbls. Chopped mint
1Tbls. Minced lemon zest
1/4 tsp. Cayenne pepper
Salt to taste


1. Mix all ingredients
2. Form mixture into 2 oz. patties
3. Heat sauté pan, add oil
4. Brown on both sides to desired doneness




6oz. English cucumber
Salt to taste
1/2 fl. oz. Fresh lemon juice
1 fl. golden olive oil
6 fl. ozs. Thick whole milk yogurt
1/2 oz. minced garlic
1/2 oz. chopped fresh dill
White pepper to taste


1. Trim and peel the cucumber. Use a spoon to scrape out the seeds.
2. Grate the cucumber into a strainer and press on it to remove as much liquid as possible.
3. Mix the cucumber with some salt and allow to stand at room temperature about 15 minutes.
4. Combine the lemon juice and olive oil in a small bowl. Whisk in the yogurt a little at a time. Add the garlic and dill.
5. Squeeze the cucumber in your hand to remove the remaining.
6. Taste and correct the salt. Season with pepper.
7. Place the tzatziki in the refrigerator and allow to mellow for at least 30 minutes.
8. Taste and correct the seasoning again, adding lemon juice and/ or salt as needed.
