Italian Nachos

What do you get when Italian and Mexican meet? The one sure bet for the Super Bowl: Italian Nachos. Layers of Italian goodness; cheese, meats, nachos, peppers, and a ton of taste. Make enough for everyone because everyone will love it!

Serves 8-10


3 bags nachos of your choice (corn tortillas, guacamole chips)
2 cups shredded Italian cheeses (Asiago, Mozzarella, Parmesan, Provolone)
1 cup Italian meats (Italian sausage, pepperoni, capicola, salami, meatballs)
1 cup sliced pepperoncini
1 cup sliced banana peppers
1 cup sliced baby tomatoes
1 cup pitted chopped olives
1 cup chick peas
1 cup diced roasted red peppers
1 cup diced green, yellow, orange and red bell peppers
2 Tbls. chopped Italian flat leaf parsley (to garnish)

Optional ingredients: Add or remove any of the above ingredients depending what is in your fridge. Can also add Beschamel Sauce (see below), Balsamic glaze and pesto.


Layer 1/3 of chips, meat, veggies and cheese then repeat until ingredients are exhausted. Place in oven on broil at 350 degrees for two minutes (until cheese melts.)


Beschamel Sauce

Ingredients: (Serves 8-10)
1 stick butter
1/4 cup flour
3 cups milk
1 cup grated Parmesan cheese
Salt and pepper (to taste)
2 pinches nutmeg


Whisk butter and flour in sauce pan until combined (2 minutes). Slowly add in milk while whisking. Add Parmesan cheese, salt and pepper to taste and finish with nutmeg.
