Potato Latkes

Potato Latkes by Food Wonders TV‘s Seena Chriti


5 large potatoes (grated)
1 large onion (grated)
1 egg beaten
Matzo meal ½ Cup approximately
Oil for frying

~Serve with apple sauce
After grating the potatoes, put them in a colander and drain out as much liquid as you can

Grate an onion (about 1/3 of the potatoes). Put all the mixture in a large bowl.

Add the beaten egg and enough matzo meal to hold it all together (careful with the matzo meal – you don’t want it to be heavy – just enough to make latkes) Add salt before frying. Form little pancakes with the mixture.

Heat your oil in a large frying pan then add the latkes, turn when one side browns and fry until the other side browns. Drain on paper towels (I usually put newspaper under the paper towels to absorb all the oil.) Use your judgment on the size.
