Cucumber Cups with Grilled Tarragon Shrimp

1 English cucumber, peeled and cut into 2 in pieces

1/2 lb. medium shrimp

2 Tbsp. lemon juice

Olive oil

1 tsp. lemon zest

1Tbsp. minced tarragon

3 ozs. cream cheese

Salt to taste


1. Scoop out cucumber with melon baller

2. Salt and place on paper towel

3. Brush peeled shrimp with olive and grill

4. Mix tarragon, lemon zest, lemon juice with the cream cheese

5. Fill cucumber cups with cream cheese mixture, top with shrimp and tarragon sprig
