Roasted Portabella with Sweet Crab

Enjoy this recipe for Roasted Portabella with Sweet Crab from Nani's Cucina in the West Shore Farmer's Market.



4 large Portabella

1 can Crabmeat

2 cups Cornbread, crumbled

1 teaspoon Hot sauce

1 teaspoon Worcestershire sauce

1 teaspoon Old Bay Seasoning

1 teaspoon Granulated garlic

Zest of one lemon (Can add juice if you want more lemon)

1 cup Red and green peppers, diced

1 tablespoon Mayonnaise, can be omitted

½ cup Italian Flat Leaf Parsley, chopped

¾ cup Shredded cheese (Mozzarella, Provolone or your own selection)



1. Preheat grill at high heat.

2. Loosely Mix all ingredients, except cheese by hand. Clean portabella, including removal of stem. Take mix and pack into portabellas. Top with shredded cheese.

3. Place filled portabella on tin foil and grill for 8-10 minutes with lid closed. Cook longer for well-done or larger portabellas.


Note: Use imagination. You can add roasted veggies, olives and any other fun stuff!
