Blackberry BBQ’d Chicken & Pork

Of course you can use fresh blackberries, but due to availability and costs of the little yummy berries, Sharon Prudhomme of Prudomme's Lost Cajun Kitchen uses a nice seedless blackberry jam for this recipe that's great for chicken, pork, wings, meatballs and more.



1 jar of seedless or seeded blackberry jam

4 Tablespoons butter

Hot sauce, to taste

1 teaspoon of crushed red pepper

Pinch of red, black, and white pepper – pat on both sides of meat

Salt, to taste (optional)

Slices of Bermuda onion

Sliced tomato



In a small stainless steel bowl, combine jam, butter, hot sauce, salt and pepper until melted and blended smoothly

Let's try this two ways:

1. Place seasoned meat in the center of a square of aluminum foil. (Fold sides of foil to strengthen). Brush generously with blackberry sauce, top with rings of Bermuda onion and tomato, then bring up foil edges and fold into package. Place on grill for about four minutes on each side. Press for firmness/tenderness. Slice on bias and top a crisp salad.

2. Place seasoned meats on grill. After first turn, brush with BBQ mixture. Flip and brush again. If you choose, place aluminum foil over grill grate for easy cleanup. When slightly firm to touch, remove and add to crisp salad for fun summer meal.
